Step inside the ramen shop with Payesone Myatmon and Shiho Hamakata, co-owners of ZAO Stamina Ramen in Bethesda and the creative force behind the pop-up concept Menri Ikkuu. Together they bring both tradition and innovation to the bowl, drawing on deep roots in Japan and a devotion to the craft of ramen. In this immersive workshop, students will explore the foundations of ramen, beginning with dashi and broths simmered with bones and aromatics, then moving into the science of noodle making with hydration levels, flours, and kansui. Guests will learn about tare, the seasoning base that defines regional styles, and the aromatic oils that add layers of depth, before assembling their own bowls with chashu pork, poached chicken, or vegetables, and finishing with classic toppings such as soft-boiled eggs, scallions, sesame, and nori. The class offers both an understanding of regional ramen traditions and the inspiration to create a bowl that is entirely your own.
