Tortillas are the heart of Mexican cuisine, and in this session, you’ll master the art of making soft, flavorful corn tortillas from scratch—just like they’re done in traditional kitchens across Mexico.
We’ll start by exploring nixtamalization, the ancient process that transforms corn into masa, giving tortillas their unique flavor, aroma, and nutrition. Using Masienda’s heirloom blue and yellow corn masa harina, you’ll experience the true depth of flavor that comes from sourcing the finest, sustainably grown corn. We’ll also dive into the importance of heirloom varieties, regional tortilla styles, and the difference between masa harina and fresh masa.
Then, you’ll get hands-on—mixing, kneading, and pressing your own tortillas before cooking them on a hot comal. Feel the difference between freshly made tortillas and store-bought ones—warm, tender, and slightly charred, ready to be filled with melty queso Oaxaca.
From there, we’ll turn our tortillas into quesadillas, filling them with queso Oaxaca, a stretchy, buttery cheese that melts beautifully. You’ll have the option to customize your quesadillas with a selection of flavorful fillings like sautéed mushrooms, roasted poblanos, slow-cooked carnitas, or caramelized onions.
To finish, we’ll prepare house-made salsas—from a bright and tangy tomatillo salsa verde to a smoky, spicy chipotle salsa—so you can pair your creations with bold, authentic flavors.
By the end of the class, you’ll have the confidence to make tortillas from scratch anytime—and a new appreciation for the deep cultural traditions behind this staple of Mexican cuisine.
