We may enjoy pie as the final course, but it’s a foundation of the American holiday table. More than a dessert, it is the anchor of celebration, the dish that signals the season and gathers generations around the table.
At its heart is the crust, buttery and flaky, a structure as much as a flavor. In this masterclass, Master Baker Amber Eisler will teach you how prepare the crust entirely from scratch, learning to work the butter into the flour with precision, to roll evenly, to crimp with beauty, and to par bake for strength and depth of flavor.
From there the possibilities open endlessly. A single crust may hold fruit, custard, or cream, each transformed by the pastry beneath. Together we will create a classic apple pie, filling it with tender spiced apples and finishing with a crumble topping that bakes to a golden crown. Each student will depart with a pie ready for the oven or the freezer, a gift held in reserve for the holiday table or any special occasion.
This class is limited to only 8 participants each working at their own station. Includes apron, recipe booklet, take home pie, and refreshments during class.
This November, Skillette Cooking School is honored to host Amber Eisler, Baking School Director at King Arthur Baking, for a holiday residency at Union Market. Amber will travel from Vermont to lead a series of exceptional baking experiences, a rare opportunity to study with one of the country’s most accomplished bakers, to work side by side at the table, and to carry home both recipes and ritual for the season ahead.
