Knife Skills 3 will continue with precision French cuts, working on fine and micro shapes like the fine julienne, small dice, brunoise, and mincing.  Students will also learn how to shave paper-thin slices with a mandoline and how to use the level chop to safely cut and dice very large items like summer melons.
