Mike Friedman is the chef and owner behind The Red Hen, All-Purpose, AP Pizza Shop and Aventino. His latest concept, Fossette Focacceria, is inspired by traditional focaccerie in Italy and features a menu of hearty sandwiches on housemade focaccia, including two new additions exclusive to Union Market: Capra with prosciutto cotto, sopressata, pickled peppers, fresh basil and calabrian chili honey (All-Purpose’s popular Buona pizza in sandwich form) and the vegetarian Portofino with balsamic-marinated and roasted portobello mushrooms, roasted onions and peppers, crumbled feta and herb aioli. Other menu highlights include Mortazza with mortadella, stracciatella, pistachio crema, black pepper and evoo, Italiano with salami, finocchiona, soppressata, mortadella, mozzarella, arugula, spicy peppers, Italian vinaigrette and Circolo with smoked turkey breast, iceberg, vine-ripe tomato, cabbage and aioli.
