What started as a passion project to make the perfect baguette in Le Diplomate’s kitchen evolved into an exceptional operation where six expert bakers begin their day at 3:30 am and churn out hundreds of baguettes, naturally-leavened boules, and a multitude of specialty breads including hamburger buns, buttery brioche, fruit and nut breads, and soft sandwich bread to supply the 14th Street French brasserie.
A microshop showcasing the magical marriage of heirloom whole-wheat flour, a living levain starter, water, and a selective list of exceptional ingredients, Bread Alley is tucked away on Morse Street, NE in the alley between 4th + 5th Streets. The diminutive 100 sq. ft. shop will feature shelves of signature breads including crusty French baguettes, multigrain levain boules, and cranberry walnut boules. As the bakers grow into the new space, they plan to offer additional selections such as viennoiserie, pastries, and additional specialty breads on a rotating basis. Pre-packaged products such as small-batch, local jams, butter, honey, and salts will also be available for purchase.
