Chef Ben brings his celebrated Thaitalian fusion to the holiday table with two inventive pastas: Pad Krapow Gnocchi and Mushroom Panang Curry Lasagna with Lime Leaf Béchamel. Students will learn the art of pasta-making with spinach and Thai basil dough, build layered lasagnas to bake at home, and craft pillowy gnocchi finished in a fragrant Pad Krapow sauce. Toppings of pickled chilies, peppercorn, fried shallots, and sous vide egg take the dish to another level. Students will enjoy Thai tea cannoli after class and leave with both recipes and skills to recreate Urai’s inspired blends of comfort food and fine dining.
