Next, we’ll turn to the tactile world of texture—where a crisp tuile, a silky purée, or the chew of a perfectly cooked grain can shift the entire experience of a dish. You’ll examine how elements like heat, coolness, spice, and even tingling sensations activate the palate and amplify flavor.
The final portion of the class focuses on plating as an expressive art.
